Donuts are one of those treats that range from 'gas station regret' to 'life-changing experience' with very little middle ground. The difference usually comes down to where you're buying them and how recently they were made.
Freshness over everything
A fresh donut and a 4-hour-old donut are barely the same food. The best donut shops make small batches throughout the day. If you can, go early, but also ask what time they do their second batch. Some shops fry again around 10-11am, and catching a fresh batch mid-morning is a move.
Cake vs. yeast vs. cruller
These are the three main donut families. Cake donuts are dense, crumbly, and often covered in a thin glaze or cinnamon sugar. Yeast donuts are lighter, airier, and more pillowy, these are your classic glazed donuts. Crullers are made from choux pastry, giving them an eggy richness and a crispy-light texture. Look at the glaze. A great glaze should be thin, slightly crackly, and dissolve on your tongue. If it's thick, gummy, or overly sweet, the shop is probably cutting corners. The best shops make their glaze fresh and you can usually tell by how it looks: slightly translucent with a subtle sheen.
Rate the hole, not just the whole
